Loaded Nachos (supermarket style)
These nachos are great to share with friends or for when you fancy a bit of no hassle indulgence! There aren’t any rules with this one so just choose your favourite ingredients and you’re good to go 🙂

Ingredients
- 200g (approx)/1 bag plain vegan tortilla chips/crisps
- 200g salsa (approx)
- 150g (approx) vegan guacamole (Sainsbury’s Be Good To Yourself Guacamole, Holy Moly, Asda Smashed Avocado dip, Morrison’s Guacamole or use a chopped up avocado)
- 200g black beans, drained and rinsed, or use refried beans
- 1 tin or packet of vegetable chilli (Amy’s, Asda, Sainsbury’s, Tesco) or 1 tin lentils, drained and rinsed
- Handful of jalepenos, drained and rinsed
- 2 handfuls of vegan cheese, grated
- 2 tbsp vegan sour cream (eg Asda, Sainsbury’s, Tesco free from. You can also use vegan crème fraîche eg M &S or Oatly)
- Handful fresh coriander
Instructions
- Heat the grill onto a medium heat.
- Heat the lentils or tinned chilli into a saucepan and heat on a low heat until warmed.
- While this is heating, empty the tortilla chips onto an oven tray and spread out evenly.
- Add and layer up the vegan cheese, black beans, jalepenos and warmed chilli then place under the grill for a few minutes until the cheese has slightly melted.
- Remove from the grill and add the guacamole, salsa, sour cream and coriander.
- You don’t need to be precise with any of the measurements or assembly. Just get stuck in and get creative!
