Loaded Nachos (supermarket style)

These nachos are great to share with friends or for when you fancy a bit of no hassle indulgence! There aren’t any rules with this one so just choose your favourite ingredients and you’re good to go 🙂

Ingredients

  • 200g (approx)/1 bag plain vegan tortilla chips/crisps
  • 200g salsa (approx)
  • 150g (approx) vegan guacamole (Sainsbury’s Be Good To Yourself Guacamole, Holy Moly, Asda Smashed Avocado dip, Morrison’s Guacamole or use a chopped up avocado)
  • 200g black beans, drained and rinsed, or use refried beans
  • 1 tin or packet of vegetable chilli (Amy’s, Asda, Sainsbury’s, Tesco) or 1 tin lentils, drained and rinsed
  • Handful of jalepenos, drained and rinsed
  • 2 handfuls of vegan cheese, grated
  • 2 tbsp vegan sour cream (eg Asda, Sainsbury’s, Tesco free from. You can also use vegan crème fraîche eg M &S or Oatly)
  • Handful fresh coriander

Instructions

  1. Heat the grill onto a medium heat.
  2. Heat the lentils or tinned chilli into a saucepan and heat on a low heat until warmed.
  3. While this is heating, empty the tortilla chips onto an oven tray and spread out evenly.
  4. Add and layer up the vegan cheese, black beans, jalepenos and warmed chilli then place under the grill for a few minutes until the cheese has slightly melted.
  5. Remove from the grill and add the guacamole, salsa, sour cream and coriander.
  6. You don’t need to be precise with any of the measurements or assembly. Just get stuck in and get creative!
