Simple Roast Tomato Soup

Ingredients

  • 1kg tomatoes, roughly chopped
  • 2 cloves garlic, peeled
  • Glug olive oil
  • 1 tbsp balsamic vinegar
  • Handful of fresh basil
  • 1 stock cube, dissolved in a tiny amount of boiling water
  • Salt & pepper, to taste

Instructions

  1. Pre-heat the oven to 200ºC/395ºF/Gas Mark 6.
  2. On a roasting tray, place the tomatoes, garlic and cover with a good glug of olive oil.
  3. Roast for 30 minutes or until soft.
  4. Blend the roasted garlic and tomatoes with the balsamic, stock and fresh basil until smooth.
  5. Optional: serve with vegan cream, flaked almonds, croutons and fresh basil.
