Simple Roast Tomato Soup

Ingredients
- 1kg tomatoes, roughly chopped
- 2 cloves garlic, peeled
- Glug olive oil
- 1 tbsp balsamic vinegar
- Handful of fresh basil
- 1 stock cube, dissolved in a tiny amount of boiling water
- Salt & pepper, to taste
Instructions
- Pre-heat the oven to 200ºC/395ºF/Gas Mark 6.
- On a roasting tray, place the tomatoes, garlic and cover with a good glug of olive oil.
- Roast for 30 minutes or until soft.
- Blend the roasted garlic and tomatoes with the balsamic, stock and fresh basil until smooth.
- Optional: serve with vegan cream, flaked almonds, croutons and fresh basil.
