Vegan Tzatziki

This traditional Greek dip makes the perfect accompaniment to a variety of lovely dishes...
Ingredients:
- 350g plain vegan yoghurt (sugar-free)
- ½ cucumber, finely diced (skin removed - optional)
- 2 tbsp lemon juice
- 2 cloves garlic, crushed
- Handful fresh dill or oregano, stalks removed and finely chopped
- 2 tbsp extra virgin olive oil
- Pinch salt and pepper, to taste
Method:
- Combine all the ingredients in a small bowl.
