Caramelised Onion Yellow Rice with Lentils

Ingredients

Rice and lentils

  • 5 tbsp olive oil
  • 4 tsp dried thyme
  • 4 tsp mixed herbs
  • 1 tsp ground black pepper
  • 1 tsp ground turmeric
  • 300g/1½ cups brown lentils
  • 1500ml/6 cups vegan stock or water
  • 185g/1 cup uncooked basmati rice
  • 2 tsp salt

Caramelised onions 

  • 3 large onions sliced
  • 125ml/½ cup vegetable oil

Instructions

Rice and lentils 

  1. Using a large saucepan (that has a lid), heat the olive oil on a medium heat. Stir through the herbs and spices and sauté for 2-5 minutes.
  2. Add the lentils and vegan stock. Put the lid on the saucepan and cook the lentils for 10 to 15 minutes.
  3. Stir in the uncooked rice and salt, place the lid on again and simmer for 15 minutes or until the rice is cooked.

Caramelised onions

  1. Using a large frying pan, heat the oil for a couple of minutes on a medium heat.
  2. Add the onions and fry for 15 minutes or until golden brown, stirring frequently.

Assembly

  1. Once the rice is cooked and the onions are golden brown, transfer the rice and lentils to a serving bowl and top with the caramelised onion.
