Vegan Eggs Benedict
Enjoy a veganised crispy tofu version of this classic brunch! The black salt creates a perfectly ‘eggy’ taste and the creamy hollandaise finishes off the dish delightfully.

Ingredients
Hollandaise sauce
- 150ml/5.3 fl oz unsweetened soya milk (needs to be soya milk for this one)
- 1 tbsp cider vinegar or white wine vinegar
- 1 tsp Dijon mustard
- ½ tsp black salt (Kala Namak)
- ½ tsp garlic powder
- ¼ tsp turmeric
- ¼ tsp cayenne pepper
- 1 tbsp lemon juice
- 1 tsp syrup (eg maple or agave)
- 150ml/5.3 fl oz neutral oil (eg rapeseed)
Tofu coating
- 50g/⅘ cup nutritional yeast
- 3 tbsp cornflour (use gluten-free if needed)
- 1 tsp garlic powder
- Pinch of salt and pepper
Tofu
- 225g/8 oz (approx.) extra firm tofu, cut into 2cm thick slices
- 4 tbsp soy sauce
- 1 tbsp rapeseed oil
Muffins
- 2 English breakfast muffins (use gluten-free if needed), halved, toasted and spread with vegan butter
Optional toppings: chilli sauce, chopped chives or parsley
Instructions
Hollandaise sauce
- Add all the ingredients (apart from the oil) to a large jug.
- Using a stick blender, blend all the ingredients together, adding the oil a little bit at a time until the mixture becomes thick and creamy. Set aside.
Tofu coating
- Mix all the ingredients together in a bowl and set aside.
Tofu
- Whisk the soy sauce and rapeseed oil together in a bowl and set aside.
- Fully immerse the tofu slices in the soy sauce/oil mix then immediately dip them in the tofu coating. Make sure that each slice is fully coated then press down to make sure it sticks properly.
- Fry the fully coated tofu slices in a little oil, on both sides, until golden.
Assembly
- In a small saucepan, gently warm the hollandaise sauce on a low-medium heat.
- Place the tofu slices on top of the toasted breakfast muffins, along with any of the optional serving suggestions.
- Pour the warmed hollandaise sauce over the top and serve.
Serving suggestions: fried cherry tomatoes, fried potatoes, garlic mushrooms, grilled asparagus, sliced avocado, vegan bacon, wilted spinach
