We are just in love with this berrytastic bowl of goodness and all the toppings that go with it – sprinkle on a little bit of well… everything and enjoy a heavenly treat to start the day!

Ingredients

  • 1 large ripe banana, peel and frozen
  • 250ml/1 cup sweetened or unsweetened plant milk (depending on how sweet you’d like it)
  • 180g/6.3 oz frozen berries of your choice
  • 1 tbsp nut butter of your choice (we used almond)
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract
  • Handful of fresh spinach
  • 1 date, pitted (optional – add this if you’d like it to be a little sweeter)
  • 1 tbsp vegan protein powder (optional)

Optional toppings: cacao nibs, chia seeds, chopped dates, chopped nuts, desiccated coconut or coconut flakes, dried fruit, drizzle extra nut butter (if runny), edible flowers, flaxseed, freeze-dried berries, fresh berries, fresh fruit, fresh mint, goji berries, granola, lemon zest, maple syrup, mixed seeds (hemp, sunflower, pumpkin), muesli, nutmeg, pinch of cayenne pepper, cinnamon, sliced banana, vegan chocolate

 

Instructions

  1. Place all the ingredients into a high-speed blender and blend until smooth.
  2. Arrange any of the toppings you fancy in a nice pattern and serve immediately.
