Ingredients

  • 6 ripe tomatoes, finely chopped
  • 1 onion, finely diced
  • 2 green chillies, deseeded and finely diced
  • Juice of 2 limes
  • Glug of extra virgin olive oil
  • 1 clove of garlic, finely diced
  • 1 big bunch of fresh coriander
  • Salt and pepper, to taste

Instructions

  1. Mix all the ingredients together and drizzle with a little of the olive oil.
  2. Season to taste.
