Dirty Slaw

This is the kind of slaw that you get in fast-food restaurants – and it’s delicious! It goes great with pulled jackfruit, tofish and chips, barbecues and burgers! If you prefer it clean, replace the dressing with a little olive oil or sesame oil, lemon or lime juice and add toasted pumpkin, sunflower and/or sesame seeds.

Ingredients

Vegetables

  • 180g/6.3 oz white cabbage, grated (use half white and half red if you prefer)
  • 1 carrot, peeled and grated
  • ¼ white onion, very finely minced

Dressing 

  • 1 tbsp caster sugar
  • 3 tbsp vegan mayonnaise
  • 1 tbsp unsweetened plant milk mixed with 1 tbsp white wine vinegar or cider vinegar
  • 1 tbsp lemon juice (fresh or bottled)
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

Vegetables

  1. Place the grated vegetables in a mixing bowl and set aside.

Dressing

  1. Mix all the ingredients together thoroughly then stir through the vegetables until evenly coated.

Tip 1: If you’d like to create a Thai-style slaw then take off the original dressing and create a new dressing using the following ingredients: 2 tbsp olive oil, 2 tbsp toasted sesame oil, 2 tbsp syrup (eg maple or agave), 3 tbsp rice vinegar or cider vinegar, 1 tbsp soy sauce, 2cm piece of ginger, peeled and grated, 1 clove garlic, crushed, ½ tsp salt, ½ tsp chilli flakes

Tip 2: If you want to posh up the coleslaw then thinly slice the cabbage instead of grating it and add one fennel bulb, cut into quarters and shredded
