Sticky Cider & Orange Carrots

Ingredients
- 2 tbsp vegan butter
- 3 large carrots, trimmed, peeled and chopped into finger-sized pieces
- 2 tbsp fresh orange juice
- 2 tbsp cider (use gluten-free if needed)
- 1 tsp brown sugar
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 tbsp thyme leaves, stalks removed
- Handful of toasted pine nuts (optional)
Instructions
- Melt the butter in a large frying pan on a low heat. Then add the carrots and cook for 10-15 minutes, tossing occasionally until browned.
- Add the orange juice, cider, sugar, salt, pepper and thyme and simmer for 15-20 minutes until the carrots are tender and sticky.
- Stir through the toasted pine nuts and heat for 2 minutes.
- Serve, or leave to cool then reheat when ready to use.
