Ingredients

  • 2 tbsp vegan butter
  • 3 large carrots, trimmed, peeled and chopped into finger-sized pieces
  • 2 tbsp fresh orange juice
  • 2 tbsp cider (use gluten-free if needed)
  • 1 tsp brown sugar
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 tbsp thyme leaves, stalks removed
  • Handful of toasted pine nuts (optional)

Instructions

  1. Melt the butter in a large frying pan on a low heat. Then add the carrots and cook for 10-15 minutes, tossing occasionally until browned.
  2. Add the orange juice, cider, sugar, salt, pepper and thyme and simmer for 15-20 minutes until the carrots are tender and sticky.
  3. Stir through the toasted pine nuts and heat for 2 minutes.
  4. Serve, or leave to cool then reheat when ready to use.
