Ingredients

Cooked mix

  • 50g/2 oz smoked or extra firm tofu (supermarket own-brand), cut into 2cm cubes
  • ½ clove garlic, finely chopped
  • 5 x cherry tomatoes (supermarket budget range)
  • 50g/1.8 oz chickpeas, drained and rinsed
  • 1 block of frozen spinach
  • 1 tbsp soy sauce (use gluten-free if needed)
  • Salt and pepper, to taste

Toast base

  • 2  x slices of wholemeal bread, toasted (use gluten-free if needed)
  • 2 tbsp tahini or hummus

Topping

  • 1 tbsp sunflower seeds
  • Choose either balsamic glaze, sriracha or vegan mayonnaise to drizzle over the top

  • 4 blocks of frozen spinach
  • 4 tbsp soy sauce (use gluten-free if needed)
  • Salt and pepper, to taste

Instructions

  1. Heat a small amount of oil in a saucepan and then add the tofu. Fry for around 5 minutes until lightly golden.
  2. Add the garlic and fry for a minute before adding the cherry tomatoes, chickpeas, frozen spinach and soy sauce. Heat until the spinach has fully wilted, stirring frequently. Season to taste.
  3. Put a layer of your chosen spread onto the hot toast and then pour on the cooked mix.
  4. Finish off with the sunflower seeds and drizzle of your choice.
