Easy Raw Romesco Salsa

Romesco is a traditional Catalonian, nutty, tomato-based sauce. Enjoy with salads, courgette noodles, pitta, roasted or raw veg and anything else you fancy!

Ingredients

  • 1 clove garlic, peeled and roughly chopped
  • 1½ red pepper, cored and roughly chopped
  • 1½ tbsp soy sauce (use tamari if GF)
  • 8-10 sundried tomatoes
  • 50g skinless almonds or ground almonds
  • 3 tbsp olive oil
  • ¾ tsp brown sugar or syrup (eg maple or agave)
  • 1½ tbsp lemon juice
  • Pinch salt (taste at the end and add more if necessary)

Instructions

  1. In a food processor or high powered blender, using the pulse function, blend the almonds gradually (if using whole) until chopped but not powdery.
  2. Add all of the other ingredients and blend until smooth.
