Ingredients

  • Half a small white cabbage, grated on the large holes or finely chopped
  • 2 very large carrots, peeled and grated
  • 2 spring onions chopped small or 1 tbsp finely chopped red onion
  • 175g/6oz egg-free mayonnaise (for a less fatty mayo, use half and replace the other half with soya or rice milk. Mix in well).
  • Salt and black pepper
  • You can also make your own mayo – it’s cheaper and lower in fat

Instructions

1. Mix all of the ingredients together in a large bowl. Add more mayonnaise if necessary.

2. Store in the fridge covered and eat within a few days.
