One Pot Spicy Sausage & Tomato Rice

Ingredients

  • 1 red onion, finely diced
  • 1 red pepper, deseeded and finely diced
  • 8 vegan sausages (use gluten-free if needed)
  • 3 cloves garlic, crushed
  • 1 tsp chilli powder
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tbsp tomato purée
  • 2 tsp sriracha
  • 300g/10.5 oz basmati rice, rinsed
  • 700ml/24 fl oz boiling water
  • 1 x 400g/14 oz tin chopped tomatoes
  • 2 tsp salt
  • ¼ tsp black pepper
  • 2 tsp lime juice

Instructions

  1. Using a large deep frying pan or wok, fry the onion in a little oil on a medium heat for a few minutes. Add the red pepper and sausages and heat until the sausages are cooked through (see packet), turning occasionally. Stir through the garlic and fry for a further 2 minutes.
  2. Stir through the chilli powder, smoked paprika, oregano, parsley, tomato purée, sriracha and rice. Heat for a minute before adding the boiling water, tomatoes, salt and pepper.
  3. Bring to the boil, then cover with a lid or foil and simmer for 5 minutes. After 5 minutes, thoroughly stir then place the lid back on for another 5 minutes. Stir again, place the lid back on then heat for another 5 minutes. Check that the rice is thoroughly cooked through before serving.
