Vegan Pancakes – Sweet or Savoury

The thing we like best about these pancakes is that you just make the simple batter and then dress them up to create a sweet or savoury delight. We’ve featured a tasty savoury treat but we also love a good helping of vegan chocolate spread with fresh berries and a dusting of icing sugar – yum! Makes 8 pancakes.

Ingredients

Dry ingredients

  • 350g/2¾ cups plain flour (you can use half plain, half wholemeal flour for a healthier version)
  • 4 tbsp gram/chickpea flour, sieved
  • 2 tsp baking powder
  • ¼ tsp salt

Wet ingredients 

  • 350ml/12 fl oz unsweetened plant milk
  • 350ml/12 fl oz water
  • 2 tbsp vegetable oil

Sweet serving suggestions: caramelised apple, fresh berries, lemon juice, maple syrup, sliced banana, sugar, vegan chocolate spread, vegan ice cream, vegan yoghurt

Savoury serving suggestions: avocado, fried cherry tomatoes, fried potatoes, garlic mushrooms, scrambled tofu, vegan cheese, vegan ham, vegan lardons or vegan bacon, vegan mayonnaise, vegan tuna, wilted spinach

Instructions

  1. Place all the ingredients in a blender and blend until smooth. Alternatively, whisk by hand until there are no lumps. If hand whisking, thoroughly combine the dry ingredients first then add the wet ingredients gradually.
  2. Heat a non-stick frying pan on a medium heat and then add a small amount of oil (a hot pan makes better pancakes).
  3. Pour enough of the batter mixture into the frying pan to thinly cover the bottom. Fry on one side for about a minute. Loosen the edges with a spatula and flip. Fry the flip side for another minute or until cooked through and lightly golden.
  4. Remove from the pan and keep warm in the oven on its lowest setting.
  5. Add more oil to the pan if and when necessary. Repeat steps 3 and 4 until all of the mixture is used up.
