Ingredients

  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 1 tsp fenugreek seeds
  • 1 tsp black peppercorns
  • 2 whole allspice berries
  • Seeds of 4 green cardamom pods, shells removed
  • 4 whole cloves
  • 2 tsp dried bird’s eye chillies or 2 tsp hot chilli powder
  • 2 tbsp sweet paprika
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 1 tsp ground nutmeg
  • 1 tsp ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground turmeric

Instructions

  1. In a medium frying pan, heat (without oil) the coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, allspice berries, cardamom pods, cloves and dried bird’s eye chillies until fragrant (don’t let them burn!).
  2. Blend them to a powder using the milling blade on a blender or a spice grinder.
  3. Add the remaining ingredients to the blender and blend again until combined.
  4. Store in an airtight container for up to 6 months.
