
Pulled Barbeque Jackfruit With Protein Options & Dirty Slaw
Even members of the team who said they didn’t like jackfruit loved this dish! Jackfruit creates the perfect pulled meat substitutes and we’ve added lots of spice, barbecue sauce and a selection of protein options for a hearty feast.

Ingredients
Seasoning mix
- 2 tsp sugar, ideally brown
- 1 tsp paprika
- 1 tsp chilli powder
- ½ tsp salt
- ½ tsp black pepper
Jackfruit mix
- 3 x 400g/14 oz tins jackfruit, drained and rinsed
- 1 red onion, finely diced (optional)
- 2 cloves garlic, finely chopped (optional)
- 180ml/¾ cup vegan barbecue sauce
- 2 tbsp soy sauce
- 100ml/3.4 fl oz water
- Salt and pepper, to taste
Choose 1 of the following protein options:
- 3 handfuls of salted cashews
- 1 x 400g/14 oz tin cannellini beans, drained and rinsed
- 100g/3.5 oz vegan lardons, cooked according to the packet
- Make half quantity of this tofu recipe
Slaw
If you’re short of time then use a shop-bought plant-based slaw.
Make a batch of this slaw (optional)
Serving
- 4 large rolls spread with vegan butter
- Salad of your choice for serving
Instructions
Seasoning mix
- Thoroughly combine everything in a small jug or mug and set aside.
Jackfruit mix
- Remove any hard pieces of core from the jackfruit and then shred/tease it apart well using your hands.
- Place the jackfruit in a mixing bowl and coat with the seasoning mix. Set aside.
- In a medium-sized saucepan, fry the onion in a little oil on a low heat until nicely caramelised (but not burnt).
- Add the garlic and fry for another 2 minutes.
- Add the seasoned jackfruit to the pan along with the barbecue sauce, soy sauce and water. Cook on a low-medium heat for around 15-20 minutes. Add salt and pepper to your taste.
- Stir through the protein option of your choice and warm through for a couple of minutes.
Assembly/serving
- Divide the jackfruit mix evenly between the 4 rolls.
- Add the slaw and salad.
