Maple Roasted Parsnips

There’s nothing better than crispy golden roasted parsnips – well apart from ones covered in maple syrup! This recipe is so easy to make and will transform a standard roast/Christmas dinner into something special.

Ingredients

  • 500g/17.5 oz parsnips, peeled and cut into medium-sized strips
  • 4 tbsp oil
  • 3 tbsp maple syrup
  • Sprinkling salt and pepper

Instructions

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Heat the oil in a roasting tin in the oven until it’s starting to smoke. Add the parsnips and toss quickly so that they are well coated.
  3. Pour the maple syrup over the parsnips, sprinkle with salt and pepper and place the tin back into the oven.
  4. Roast for 30-40 minutes, turning once, or until they are tender and golden.
