Fennel and Rocket Salad

Ingredients

  • 125g brown or puy lentils from a tin
  • ½ small onion
  • 1 large bulb of fennel
  • 75g rocket salad

Dressing

  • 2 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 100ml olive oil
  • Pinch of sugar
  • Salt and pepper

Instructions

1. Drain the lentils from the tin and weigh out the amount you need. You could use any tinned pulse you have available instead, such as chickpeas or butterbeans.

2. Slice the onion thinly, then the fennel, see the instructions above if you want to see how to do this

3. Mix together the lentil, fennel and onions.

4. Beat all the dressing ingredients together with a fork, then pour over the salad and serve.
