Each week seems to bring new cooking challenges to my kitchen - and in the depths of winter, nothing is giving me greater pleasure. My new boyfriend lived in Hong Kong for several years, and at the weekend mentioned a dish he used to love, and whether we could make it vegan. So Friday night I am planning to cook up an authentic tasting Szechuan Tofu Beef dish, using Fry's veggie mince, silken tofu, spring onions, garlic, veg stock, soy sauce, chilli and sesame oil, chilli sauce and red pepper flakes. Also on the agenda for the night will be Nepalese Momos, wonton wraps filled with cabbage and carrot, onions and spices, before being steamed... The best place to find all these ingredients is our local Chinese supermarket here in Bristol! Wish me luck, and I'll check back in with the final recipe and a picture, if it's a success!
