Winter Casserole Supermarket Supper

Despite its title, this would work most times of the year – though perhaps not in the heat of summer! It’s not exactly a recipe, more about mixing ready-made options for a quick meal. The recipe photo shows cooked potatoes in the stew – so if you’ve got leftover spuds, add those. But we offer ready-made potato alternatives so don’t worry. Some products listed are also gluten-free.

Ingredients

  • Rosti or ready to go baked potatoes- enough for each serving
  • 1 serving per person of a vegan-friendly vegetable casserole
  • ½ cup per person frozen peas OR whole cooked lentils to add extra bulk and nutrition to the casserole or soup
  • Mixed ready-prepped vegetables, eg cabbage or broccoli with carrots
  • Extra salad if desired
  • Optional: veggie sausage chunks

Potato options
Rosti potatoes: Aunt Bessie’s Mini Rosti, M &S Maris Piper Rosti and Waitrose Rosti (avoid McCain’s rosti as they contain milk)
Ready-baked potatoes: Banister’s Farm; McCain’s

Casserole options
Amy’s Kitchen Harvest Casserole (GF) or Sainsbury’s Catalan Bean Casserole (it seems GF but isn’t labelled as such).
If you can’t get hold of any of these, Amy’s Kitchen thick tinned soups are pretty good too – their Lentil & Vegetable or Hearty French Vegetable can be found in most big supermarkets and also Holland & Barrett – these are all or mostly GF too.

Vegan sausage options
VBites; Linda McCartney; Fry’s; Vegetarian Choice. Use a GF vegan sausage like Dee’s or Dragonfly’s Soysage if appropriate.

Instructions

  1. Heat the oven according to the instructions on your chosen potato option. Bake until hot and golden brown. Or microwave if appropriate, following the packet instructions.
  2. Place the casserole in a saucepan or microwave dish and mix in the peas or cooked lentils. Add the sausage chunks if using – see above. Heat up.
  3. Meanwhile, steam the mixed vegetables or make a salad – preferably both!
  4. Serve the potato option and casserole hot with the vegetables and/or salad on the side.
