Very Quick Lentil Soup, baby and toddler-friendly

Very soothing and nourishing as well as an excellent source of iron. This soup is very popular with babies and toddlers.
Recommended age of child: from six months
Freeze time: 8-10 weeks
Ingredients:
- 225g/8oz split red lentils
- 1 onion, peeled and chopped
- 2 garlic cloves, peeled and chopped
- 2 tbsp veg margarine
- juice of half a lemon
- salt (optional - avoid if cooking for babies/young children)
- black pepper
- 1 teaspoon ground cumin (optional)
Method:
1. Put the lentils, onion and garlic into a saucepan with 1 litre (1¾ pints) water.
2. Bring to the boil and then simmer for about 30 minutes, until the lentils are very tender and pale. Or cook it in a pressure cooker on high for 5 minutes.
3. Stir well to get a smooth texture. Then add some lemon juice (start with 1 tablespoon), season as required and serve.
