Vegan Chicken Caesar Salad

Vegan Chicken Caesar Salad

Caesar Salad is a North American classic - from Canada to the USA and beyond... it's on so many menus! Here's the vegan version. 

Vegan chicken options.

The quickest is these delicious VBites Vegideli chicken-style pieces. They taste similar to cooked chicken and don't need any frying up - Holland & Barrett, Ocado, independents online and high street. 



Alternatively, use Quorn vegan chicken (look for the green 'vegan') on the front of the pack, Fry's chicken-style strips or other vegan meats of your choice. Each of these only takes a few minutes to fry up in a pan or wok.  




Or try smoked tofu for something even healthier! We especially love this one... Waitrose, Holland & Barrett, independent health foods stores as well as online, including Ocado and Goodness Direct






Caesar Salad Dressing
Blend everything together for a few seconds until well mixed. Alternatively measure it all into a jar, then mix thoroughly with a small whisk or a fork 
5 tbsp vegan mayo
2 tbsp unsweetened plant milk, eg almond, soya, rice etc
1 tbsp lemon juice
1 clove garlic, crushed OR a squeeze of garlic puree
2 tsp tahini or cashew butter
Salt and pepper to taste
1 tsp Dijon or other mustard
1 tsp capers
1 tbsp olive oil
1 tbsp chopped fresh parsley


Main Salad
1 pack VBites VegiDeli Chicken-style pieces OR half  pack of Fry's Vegetarian Meat-free Strips OR half a pack of Quorn Vegan Chicken pieces. GF option? Fry up some strips of smoked tofu and drizzle with a little GF soya sauce (tamari)
Salt and pepper, to taste
1 Cos or Romaine lettuce, washed and shredded
1 tbsp chopped parsley
4 spring onions, sliced - including the green ends
4 tbsp vegan croutons. Check the labels. Some are, some aren't. If you can't find any, try this: toast a couple of slices of good quality bread, preferably day old. Roughly chop or scissor the toast into smallish chunks. GF option? Esgir croutons are both vegan and gluten-free




1. Make the Caesar Dressing, as above. Set aside. 
2. If not using the ready-to-eat VBites pieces, heat up a wok or frying pan, add a tbsp of oil or so and quickly wok up the Quorn, Fry's or other vegan chicken for a minute or two. Do the same for the smoked tofu if using. Set aside. 
3. In a large bowl or smaller bowls, add the lettuce and stir in the Caesar Dressing so everything is well coated. Add the chicken pieces or tofu strips and mix in with the parsley and spring onions. 
4. Top with the croutons - however you made them! - and serve.
