Ingredients

170g/⅔ cup crunchy peanut butter
50g/¼ cup brown sugar
50g/¼ cup chickpea (gram) flour
50g/¼ cup chocolate chunks or chips
3-4 tablespoon water (enough to bind)
A sprinkle of flaky salt (eg Maldon)

Instructions

  1. Preheat your oven to 190°C/ 375°F/Gas Mark 5.
  2. In a large bowl, add the nut butter, sugar & chickpea flour.
  3. Add the water and stir to combine. Add a little extra water if the dough is too dry.
  4. Stir through the chocolate chips.
  5. Line a cookie sheet/oven sheet with baking paper.
  6. Use a teaspoon to scoop out walnut sized chunks of dough. Lightly roll them into a ball.
  7. Place them on the cookie sheet, sprinkle the flaky salt over them & use a fork to slightly flatten them.
  8. Bake in the oven for around 20 mins, until golden.
  9. Leave to cool slightly before eating. Don’t worry if they’re a bit soft when they come out the oven – they will harden up!

Did you know that Vegan Recipe Club is run by a charity?

We create vital resources to help educate everyone – vegan veterans, novices and the v-curious alike – about vegan food, health and nutrition; as well as the plight of farmed animals and the devastating environmental impact of farming.

Through this work we have helped thousands of people discover veganism; but we want to reach millions more! We rely entirely on donations as we don’t get any government funding. If you already support us, thank you from the bottom of our hearts, you are really making a difference! Please share our details with your friends and loved ones too, as every donation enables us to keep fighting for change.
