Rosie's French Dressing

Rosie's French Dressing

The simplest things are often the best. Nothing adds to a big salad like a great dressing!

Rosie says: Vegan French dressing is as straightforward to prepare as its ingredients are to source. I learned this recipe a couple of years ago but wanted to review it while I was in Paris lest there were any regional variations that I had missed. The recipe as described below was put together courtesy of a few tips I picked up from a Parisian friend – such as using tahini instead of Dijon mustard, and spiking it with just a pinch of parsley or basil.

Gluten-free option? Use a g-f mustard
Nut/seed/sesame-free? Avoid the tahini option

Ingredients: 

  • 1 tbsp Dijon mustard/tahini
  • ½ a small onion or one whole shallot, minced
  • Pinch sea salt
  • 2 tbsp lemon juice
  • 2 tbsp white wine vinegar (check the wine used is suitable for vegans)
  • 2 tbsp olive oil/groundnut oil
  • Pinch parsley or basil
  • Pinch pepper
  • Optional: 
  • ½ tsp brown sugar or 1 tsp agave syrup
  • 1 clove of garlic, peeled and chopped in half. Leave it in for a few minutes - or longer, depending on how garlicky you like your dresssing

Method: 

1. Add all ingredients to a jug or tall glass and whisk together until well blended with a fork. Store in fridge until ready.

2. Stir well before using and drizzle over yummy French salad, e.g. romaine or cos lettuce, chopped shallots and tomatoes. The rest will keep in an airtight container for 3 days.
