Quick Pizza Bread

A quick and easy way to enjoy a pizza-style snack.
Ingredients:
- 2 slices of brown/wholemeal bread (you can use a gluten-free bread if you need)
- 2 tbsp tomato puree
- 6 cherry tomatoes or 3 medium tomatoes, sliced
- 6 olives, sliced
- 1 tsp capers
- 6 tbsp grated vegan cheese
Other topping ideas:
- Mushrooms
- Peppers
- Onion
- Sweetcorn
Method:
1. Toast the bread to begin, then lay the slices out on a baking tray. Turn the grill of your oven onto a medium heat to warm.
2. Spread a tablespoon of the tomato puree onto each piece, taking it evenly to the edges of the bread. Sprinkle with the vegan cheese, then arrange the rest of the ingredients on the top.
3. Place the pizza bread under the grill for around 5-7 minutes, until the vegan cheese has melted and the toppings having softened.
4. Serve immediately.
