Quick & Easy Cucumber Raita

Quick & Easy Cucumber Raita

This is a lovely addition to any Indian meal - and vegan of course! It also works with Middle Eastern food - eg falafels and couscous dishes. Sojade, Tesco, Alpro and Provamel plain yoghurt are some of the biggest brands.  
 

Ingredients: 

  • 250ml (half a large tub) of plain soya yoghurt
  • 1/2 tsp ground cumin
  • 1/4 cucumber
  • Salt

Method: 

1. Grate the cucumber then mix it in a bowl with the cumin and yoghurt. Mix the first three ingredients together in a bowl.

2. Taste, then add salt as desired. Will keep 2-3 days in a sealed container in the fridge.
