Quick & Easy Breakfast Quesadilla with Avocado

Quesadillas are cheesy tortillas – this vegan version makes a lovely satisfying breakfast, lunch or brunch. Get the ingredients and equipment out before you start then go for it - that way you can have this on the table in 10 minutes or thereabouts.
Top tip: feel free to increase the veg ratio in the tortillas - shredded greens eg spinach, chard or rocket; grated carrot; diced peppers - raid the fridge!
If you haven't come across black beans (also known as turtle beans), give them a try - much nicer than kidney beans in our opinion and there are several brands, eg Sainsbury's, Biona, Dunn's River. Not to be confused with black-eyed beans, incidentally...
There are also plenty of vegan cheeses - hard or creamy - around in the mainstream as well as health food shops eg Violife; VBites; Sainsbury's; Sheese; Tesco; Vegusto etc.
If you're making this recipe for kids then just take out all the hot and spicy ingredients!
Ingredients:
Quesadillas
- ½ tin black beans, rinsed and drained
- 2 medium tomatoes, roughly chopped
- 2 tbsp tomato sauce or puree
- 1 spring onion, finely chopped
- Salt and black pepper
- Sweet or smoked paprika to sprinkle OR a few drops of hot pepper sauce (eg Tabasco)
- Grated vegan melty cheese, eg Violife block, VBites range, Tesco smoked OR vegan cream cheese, eg Sheese, Tesco, Tofutti, Violife
- 2 large wraps or corn tortillas – use a vegan GF version if appropriate, eg BFRee or Newburn Bakery/Warburton's
Guacamole
- 1 large ripe avocado, peeled and chopped roughly in a bowl (use more if you love avocado!)
- 1 clove garlic, crushed
- Lime or lemon juice plus salt to taste
- Pinch of chilli powder or hot pepper sauce if desired
Method:
- Mash the black beans roughly. Add the tomato sauce, spring onion, seasoning and paprika/Tabasco.
- Spread one half of the mixture on each wrap. Sprinkle with the vegan cheese. If you prefer, mash the avocado on part of each tortilla and sprinkle the guacamole seasonings on top - or just serve the guacamole on the side.
- Fold up and stick under a hot grill or in a microwave – you want the filling to be warm and the cheese to have started melting without hardening the actual tortillas.
- If serving the guacamole separately, make it now while the tortillas are warming through.
- Eat immediately.
