Pea Guacamole: low-fat, protein-rich and budget alternative

Here is a low-fat, budget, protein-rich and tasty alternative to traditional guacamole. Avocados are a great source of protein, healthy fats and other goodness but they aren't suitable for everyone, particularly those on a low-fat or diabetes diet.

  • 225g/8oz frozen green peas, thawed or fresh shelled young peas lightly steamed and cooled
  • 1 clove garlic, peeled and roughly chopped
  • ½ green pepper, cleaned, seeded and diced
  • 1 small handful of fresh coriander
  • 1 tsp olive oil
  • 1-2 tbsp lime or lemon juice (add a little at a time, taste and adjust if necessary
  • 1 heaped tsp fresh mint
  • ½ tsp lime or lemon zest
  • ½-¾ tsp salt, or more to taste
  • ¼ tsp cumin
  • ¼ tsp paprika

Food processor or stick blender and deep bowl
