Packet Mix Cakes for Vegans

For those of you who like to make cakes from packet mixes, quite a few are 'accidentally vegan'. See the selection on My Vegan Supermarket 

The instructions will tell you to add an egg or two - but there is no need! 

It all depends on the cake but as a rule of thumb, replace one egg with 3 tbsp aquafaba (tinned chickpea water), whipped up until very frothy OR 1 tbsp flax meal mixed with 3 tbsp warm water. Use plant milk instead of cow's - you get the picture!

Ingredients: 

  • 1 box of your chosen cake mix
  • egg replacer of choice, according to packet instructions. Eg for 3 eggs, use 3 times one vegan egg equivalent
  • dairy-free milk of choice to replace cow's milk
  • plus a vegan equivalent of anything else, eg chocolate, icing, cake decorations... 

Method: 

1. Pre-heat the oven according to the packet instruction. Boil the kettle. Grease the cake tin and line the base with greaseproof paper.

2. Soak the dried apple with boiling water in a measuring jug, according to the packet directions - don't forget to drain off the liquid before adding the apple to the cake mix!

3. Empty the cake mix into a mixing bowl and add the margarine, water, egg replacer, flax meal mixture and half the cinnamon sugar.

4. Using an electric mix, beat everything at medium speed for 2 minutes. Alternatively, beat vigorously with a hand whisk.

5. Add the drained apples to the cake and mix in well. Pour the cake mixture into the cake tin, sprinkle over the remainder of the cinnamon sugar and bake in the oven for 35-40 minutes.
