The Most Comforting Potato & Onion Soup in the World

Tuck into this when you are feeling under the weather - or when it's cold and raining outside. It is sure to leave you feeling lovely and nurtured! It can be made with regular onions, red or shallots - depending on what you like and what you have at home. 

Ingredients: 

  • 1 tbsp olive oil
  • 500g/1lb onions, sliced
  • 750g/1½lb potatoes, peeled and cut into 1cm/½ inch pieces
  • 1200ml/2½ pints vegetable stock or water
  • Freshly grated nutmeg
  • Salt and plenty of freshly grated ground black pepper

Method: 

1. Heat olive oil in a saucepan.

2. Add onions, cover pan and cook very gently until onions really tender but not browned – about 15-20 minutes. Add a splash of stock/water if they start to stick.

3. Meanwhile, put potatoes in another saucepan with stock.

4. Bring to boil and cook until very tender. Don't drain. 

6. Then put potatoes with their cooking stock water and a big spoonful of cooked onion into blender or food processor and purée to a smooth cream - taste and blend more onion if desired. Add the rest of the cooked onion to the soup and warm through but reserve a little for garnish. 

7. Season to taste with plenty of freshly grated nutmeg, salt and pepper.

8. Reheat gently and serve with onion garnish.
