Low fat crunchy salad with chilli tofu

Low fat crunchy salad with chilli tofu

Quick, tasty, healthy. Mmmm. If you can't do plain tofu, try firm smoked tofu like Taifun - or Cauldron pieces (higher in fat but still healthy!)

Ingredients: 

  • 100g/3 oz marinated tofu, cubed - soak in a little soya sauce, grated ginger and crushed garlic
  • 100g/3 oz mixed sprouts
  • 50g/1.5 oz green beans, chopped
  • 50g/1.5 oz sugar snap peas
  • ¼ small red onion, finely chopped
  • ¼ small red pepper, cut into pieces
  • 25g/1 oz cherry tomatoes, halved
  • Handful of spinach leaves, chopped
  • 1 stick of celery, chopped
  • Dressing:
  • 1 tbsp hemp or linseed oil
  • 1 tbsp light soya sauce - use tamari for a wheat-free option
  • Splash of lime juice
  • Small pinch of dried chilli flakes
  • Pinch of salt and Pepper

Method: 

1. Marinate the tofu cubes. While they are soaking up flavours, mix all the salad ingredients together in a bowl. Add the tofu cubes.

2. Mix dressing ingredients separately, then pour over the top of the salad.
