Justine's Gurt Lush Meringues

Justine's Gurt Lush Meringues

An incredibly cheap and easy vegan meringue recipe from store cupboard ingredients that works. Really, it's true and they taste exactly, amazingly like regular meringues. This is where science meets culinary experimentation - and nobody dies. Take note, Heston Blumenthal!

Ingredients: 

  • The water from a can of unsalted chick peas*. Drain the chickpeas, reserve the liquid and use the chickpeas in another dish
  • ½ cup caster sugar (try golden caster sugar for a more caramelly meringue)
  • A pinch of cream of tartar

 

*A regular sized tin, ie about 400-440g. It may be possible to use the liquid from home-cooked chickpeas but it would need to sit overnight to produce the same thick, protein-rich goo that is found in tinned chickpeas. And we're not sure of the quantities!

Method: 

1. Whisk the chick pea water with an electric whisk until stiff. Add the cream of tartar and whisk in.

2. Add the sugar, a teaspoon at a time (this takes a while) and whisk until it is glossy and stiff.

3. Transfer to a piping bag and pipe little dollops onto baking paper on a baking tray.

4. Bake at 100°C/just under Gas Mark ¼ for two hours then turn off the oven, and just unclick the door and leave to cool for an hour before taking out. Gently peel away from paper and serve with vegan cream, vegan ice cream, fruit or however you like.
