Italian Tomato Basil Dressing

This is a really simple, delicious and healthy salad dressing or dipping sauce. Fat-free too!

Ingredients:
- 6 sun-dried tomatoes (from a packet, not the oily ones in a jar!)
- A good handful of washed fresh basil leaves and stalks (about a quarter to half a pack)
- 1 fresh tomato, coarsely chopped
- 1 garlic clove, crushed
- 4 tbsp water
- 2 tbsp balsamic vinegar
- ¼ tsp salt, or to taste
Method:
1. If the sundried tomatoes are very dry, place them in a bowl and cover with boiling water. Set aside. If they are the moist variety in a pouch, there is no need to do this. C
2. Blend the fresh tomato, garlic, basil, water, vinegar and salt with a hand blender or in a food processor. Start with minimum amount of basil.
3. When the sun-dried tomatoes have softened, drain and add them to other ingredients and purée mixture until smooth. Taste. Add more basil and seasoning if desired then blend again.
4. The dressing will keep in a screw-top jar in fridge for up to a week.
