Ginger Soba Noodles with Lentil Salad

A hint of the Orient with this lovely, simple dish! Soba noodles are made from all buckwheat or a mixture of buckwheat and wheat. Widely eaten in Japan, they are sold in good health food shops or good supermarkets. If you can't find them, use ordinary wholemeal noodles, such as Blue Dragon, (egg-free).
For a gluten-free option, use 100% buckwheat or rice noodles - check the labels carefully. These are available from large supermarkets, Oriental stores or health food shops.

Ingredients:
- 225g/8oz soba (buckwheat) noodles
- 3 tbsp rice vinegar or 2 tbsp cider vinegar
- 1½ tbsp Aminos OR 1 tbsp shoyu soya sauce
- 2 tsp peeled, grated fresh ginger
- Pinch chilli flakes
- 2 spring onions, chopped
- Large handful fresh coriander or parsley, finely chopped
- Optional: 1 tsp toasted sesame seeds
Lentil Salad
- 1 cup cooked whole lentils, green, brown or Puy – if using tinned, rinse and drain thoroughly
- 1 red onion, finely chopped
- 1 red pepper, finely chopped
- 1 bunch of rocket, snipped into pieces
- 2 large handfuls of flat-leaved parsley
- 2 tbsp balsamic vinegar
- 2 garlic cloves, crushed
- 2 tbsp French or Dijon mustard
- 2-3 tbsp lemon or lime juice
- 2 tbsp chopped fresh dill – or 1 tbsp dried
Method:
1. Cook soba noodles according to packet instructions.
2. Meanwhile, make the lentil salad.
3. Mix lentils, onion, pepper, rocket and parsley together in a large bowl.
4. Mix together balsamic vinegar, garlic, mustard, lemon/lime juice and dill and pour over lentil/vegetable mixture.
5. When noodles are cooked, rinse and drain well.
6. Mix noodles with remaining ingredients in a large bowl.
7. Sprinkle on sesame seeds if using.
8. Serve.
