Edamame Pâté

Edamame Pâté

One of our special Mood Food recipes - packed with lots of brain-boosting nutrients including B vitamins, omegas, amino acids, protein, magnesium and zinc - to help boost your mood, sharpen your mind and combat stress. Fresh soya beans - sometimes called edamame - are widely available in larger supermarket frozen veg sections or in East Asian stores (although the latter are usually sold in pods)

Ingredients: 

  • 150g/5½oz frozen green soya beans 
  • 2 tbsp lemon juice
  • Salt and pepper
  • Pinch of chilli flakes

Method: 

1. Bring the edamame to the boil in a small saucepan of water. Reduce the heat, simmer until soft then drain. This should only take just over 5 minutes.

2. Tip them into a small mixing bowl with the remaining ingredients then blend with a hand blender or food processor.

3. Spread on Ryvita, crackers or oat cakes as a lovely happy-snack!
