Crostini with Two Toppings

Crostini with Two Toppings

If you haven't come across them before, crostini are extra crispy bread slices, ready-made. They are available from most supermarkets, usually vegan - and are a perfect vehicle for dips, spreads and the like. This recipe is good for party and buffet food although it's also lovely as a starter.  We've given you two topping recipes but you could easily invent your own. Eg roasted sundried tomatoes with strips of roasted red pepper on vegan pesto...

Ingredients: 

  • Crostini 1-2 thin slices of bread cut from a French stick per person OR a pack, eg Sainsbury TTD Olive Oil Crostini; Pogen Krisprolls
  • Olive oil
  • Nutritional yeast flakes (Engevita) OR melting vegan cheese

Mushroom, Walnut & Olive Topping

  • 100g/4oz mushrooms, wiped and finely chopped
  • 25g/1oz walnuts, grated
  • 1 garlic clove, crushed
  • Black olives, finely chopped
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp dried parsley OR 1 tbsp finely chopped fresh
  • Black pepper

Cannellini, Pistachio & Olive Spread

  • 100g/4oz cooked cannellini beans, rinsed, drained and mashed
  • 50g/2oz shelled pistachios, ground
  • 1 tbsp green olive paste or 2-3 large green pitted olives, whizzed
  • ½ tsp dried marjoram
  • Black pepper

Method: 

Make one or both of the toppings first and set aside. (See below.) To make the crostini, brush the slices of bread with olive oil on both sides. Place under a hot grill until browned on both sides, then turn over and sprinkle with yeast flakes or melting vegan cheese. Return to grill and cook until golden.

Mushroom, Walnut & Olive Topping
1. Heat oil and gently fry mushrooms and garlic until soft.
2. Remove from heat and add remaining ingredients. Mix thoroughly.
3. Spread on crostini and serve immediately.

Cannellini, Pistachio & Olive Spread
1. Mix all ingredients together until well combined.
2. Spread on crostini and serve immediately.
