Cheesy Sauce, Vegan-style… with three variations

Cheesy Sauce, Vegan-style… with three variations

This super-quick, vegan cheese sauce is a great basic recipe and can also be made lower fat if desired. It works well with pasta (macaroni or penne); potatoes and greens or baked potatoes. Or pancakes...!

Ingredients: 

Version 1

  • 180ml/6fl oz water + 2 tbsp
  • 6 tbsp tahini OR 4 tbsp cashew butter
  • 4 tbsp nutritional yeast flakes (Engevita/Marigold yeast flakes sold in good health stores)
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped shallot finely chopped (1 medium shallot) or equivalent red onion
  • 2 tbsp light miso

Version 2 - Reduced Fat

  • As Version 1, but reduce tahini/cashew butter to 2 tbsp and add 60g/2oz plain tofu.

Version 3

  • As Version 1 or 2 but add a good pinch or more of smoked paprika, to taste.

Method: 

1. Red onion and shallots are quite mild but if you find raw onion overpowering, cook it in a little oil or oil spray for a couple of minutes to soften first. Combine all ingredients and blend until smooth - if you have a hand/stick blender, this can all be done in the saucepan.

2. Heat gently without boiling before pouring over your meal - nut and seed butters become very thick if boiled.
