Cheatin’ Chicken in Mushroom Cream Sauce

Cheatin’ Chicken in Mushroom Cream Sauce

This is good served with cooked rice or sautéed potatoes and some green beans or a watercress salad.

Cream: small tubs of Alpro, Provamel or Oatly dairy-free cream are widely available. Oatly also does a fantastic creme fraiche alternative.  

Vegan chicken comes in frozen pieces, strips, chunks, tinned wheatmeat (gluten) or dried TVP. Brands to look out for

  • Fry's frozen chicken-style strips (eg Morrison's)
  • VBites chilled roast chicken-style pieces (from health stores - including Holland & Barrett - or Ocado).
  • Quorn frozen Vegan Chicken Pieces (packet has a large green 'vegan' on it to distinguish from the regular range that isn't)
  • Granovita Mock Duck is available in tins from health food shops
  • Companion and other Oriental brands, in tins - from Oriental supermarkets - tasty and very well priced
  • Home-made seitan - our recipe is easy to make
  • TVP chunks (soya) - soak in stock

  • 1 tbsp vegetable oil
  • 250g/9oz chestnut mushrooms, washed and sliced
  • 1 garlic clove, crushed
  • 1 tsp cornflour or arrowroot
  • 250ml (1 tub) Alpro Soya Dairy-free Alternative to Single Cream or rice/oat equivalent - see above
  • 150g/5oz VBites Chicken-style pieces - or see above for other suggestions
  • Squeeze of lemon juice
  • Salt and freshly ground black pepper
  • Pinch of paprika
  • Optional extra - a dash of vegan white wine or dry cider is nice. Add it to stage 2 if using


1. Heat the oil in a pan, put in the mushrooms and fry, uncovered, for 5-7 minutes, until tender. Stir in the garlic and cook for a minute or two longer. If using one of the other brands of vegan chicken, chop into rough pieces and fry in now. If using VBites, wait until Stage 3.

2. Sprinkle the cornflour over the mushrooms and mix well, then add the Alpro and bring to the boil, stirring gently. If using a dash of wine or cider, add now.

3. Add the VBites chicken-style pieces if using, stir to coat with the mushroom sauce then simmer for a couple of minutes, until everything is hot.

4. Season to taste with a dash of lemon juice, salt and freshly ground black pepper. Serve sprinkled with paprika.
