Borlotti Beans in Coconut Milk

Borlotti Beans in Coconut Milk

A great family recipe!
Recommended age of child: from 1 year
Freeze time: unsuitable for freezing

Ingredients: 

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 x 425g/150oz can borlotti beans
  • 400g/13oz canned chopped tomatoes
  • 400g/13oz can of coconut milk
  • 1 teaspoon tumeric
  • pinch chilli powder
  • salt and freshly ground black pepper
  • a little chopped fresh coriander
  • Method: 

    1. Heat the oil in a saucepan: put in the onion and cook gently for 10 minutes. Add the beans, mashing them a bit, then stir in the tomatoes, coconut, turmeric and chilli powder.
    2. Simmer for 5-10 minutes, until well heated through then season to taste and serve, sprinkled with chopped coriander.
