BBQ ‘Chicken’ Slaw & Cheese Wrap

Ingredients

  • 125g (approx.)/4½ oz vegan chicken pieces or chunks
  • 6 tbsp vegan coleslaw (either make your own or buy one ready made from Sainsbury’s, Aldi, M &S, Co-op)
  • 50g/½ cup vegan cheese, grated
  • Salad of your choice: wilted spinach, tomatoes, rocket
  • Sauce options: either sweet chilli, bbq sauce, tomato chutney, pickle (add according to taste)
  • 2 tortilla wraps

Instructions

  1. Lightly fry the ‘chicken’ pieces according to the instructions on the packet and leave to cool slightly.
  2. Divide all the ingredients between the two wraps, fold up and serve or pop in the lunchbox.
