Anneka's Festive Cinnamon Smoothie

Anneka says: 'This is a tasty festive treat to provide a healthy alternative to eggnog, providing all the smells and sensations that Christmas brings, along with some healthy fruit.The ice will make the drink taste like a cool festive cocktail, so drink in a fancy glass for added effect with a cinnamon stick popped in the top to stir your smoothie with. Ho, Ho, Ho – Happy Vegan Christmas!!'

  • Ingredients
  • 1 banana, pre-frozen in chunks a few hours previously
  • 1 apple
  • ½ tsp cinnamon
  • 2-3 pieces of cloves
  • ¼ tsp nutmeg
  • ½ tsp vanilla extract
  • Coconut milk
  • Agave nectar (optional) – no more than a teaspoon
  • Ice
  • Blender
  • juicer
  • Pestle and mortar or electric spice/coffee grinder
  • Method: 

    1. Juice the apple, then grind the cloves.
    2. Put everything in blender with ice, including the frozen banana chunks.
    Add enough coconut milk until you have a good drinkable consistency.
    Sprinkle a tad of cinnamon powder on top and enjoy!
