Baked Apple

A traditional and comforting dessert that’s easy and cheap to make and can be either slow-cooked in the oven or else microwaved for a fast dessert. As you’ll see, the traditional honey or sugar has been replaced with syrup: agave or date. Agave is low GI, delicious and found in large supermarkets; both varieties are available in good health food shops.

Ingredients

  • 4 large apples
  • 100g/4oz raisins, chopped dates or any dried fruit of your choice
  • 1 tbsp date or agave syrup
  • 4 tbsp hot water

Instructions

1. Preheat oven to 180°C/350°F/Gas Mark 4 if using this cooking method. If microwaving, go to Stage 2.

2. Wash and core apples.

3. Score skin around the middle of each apple and place in a baking dish

4. If oven-baking, fill the centre with dried fruit, pushing it in firmly.

5. Dissolve the syrup in the hot water and pour round the apples.

6. Bake for approximately 30 minutes or until apples are tender. If microwaving, do so for 5 minutes then check if the apple is tender. Add the dried fruit a minute or two before the end – too long and it will burn. Be careful, as microwaved apples also explode if cooked for too long! Use a skewer or sharp knife to test.

7. Spoon the syrup over each apple before serving and serve hot.
