Cream ‘Cheese’ & Cucumber Sandwiches Vegan-style

There is a new vegan teashop in London that serves these plus scones and cream, cakes on beautiful old tiered cake stands and little plates. Classy! But if you can't get there, no fear - try our version instead - possibly served with our Strawberry Sponge Cake

Top Tip. We've suggested Tofutti Cream Cheese, available from good health food shops. Tesco and Sheese also make soft cheeses that work well. You can also make your own easily and cheaply with our simple recipe for Vegan Cream Cheese

  • 1 tub Tofutti or other vegan cream ‘cheese’
  • Wholemeal rolls or brown/wholemeal bread, 1-2 per person
  • Thinly sliced cucumber, 4 slices per roll


1. Slice open rolls if using. Spread ‘cheese’ thickly over rolls or bread then add sliced cucumber. Remove crusts from bread if using.

2. If using rolls, cut them into halves or quarters. If using bread, cut the sandwiches into small triangles - or use cookie cutters for alternative shapes. Serve on a pretty plate. Doilies are good too. 


Why not add a sprinkling of freshly snipped cress (mustard and cress sold in the veg aisle of most supermarkets ) to add a little heat ? Yummy...

Good idea! We love cress - it's also good in our Tofu Egg Mayo sandwich filling recipe.
